I don’t know about you but I certainly didn’t grow up eating kale. In fact, there was a point when I didn’t even know what that funny leafy green vegetable in the grocery store was called. I knew it wasn’t lettuce – too wrinkly!

But now? I eat it almost every single day. I make smoothies with it, I bake it, I make salads with it and I sauté it.

Simple Sauteed Kale:

1 bunch of kale (stems removed) washed and loosely chopped
1-3 gloves of garlic, minced (depends on your fondness of garlic)
1 tbsp of minced ginger
½ tbsp of olive oil
Sea salt + black pepper
Fresh lemon
water or veggie stock (~¼ cup)

Heat olive oil in a wok or heavy frying pan. Add garlic. Stir until fragrant but don’t let it burn (otherwise the kale will taste gross). Add ginger, stir one more minute and then add the kale. I like to add a splash of liquid to help steam the kale. Sautee on high heat until the liquid evaporates, add salt & pepper, then serve. Tastes great with a squeeze of fresh lemon juice. AND a sprinkle of parmesan cheese is a nice option too.
